How We Got Started

WASS Electronics was founded by Wassie Mulugeta.  Wassie has been developing and researching a better way for preparing and cooking Ethiopian Injera. In 1999, Wassie began working on an Automated Injera cooking Machine that is able to produce 100’s of Injera per hour.  This project was completed in 2011 and is scheduled. Our goal is to make a gluten-free, yeast-free, 100% Teff Injera flatbread, which is traditionally served with Ethiopian stews and dishes like Chickpea and Sweet Potato Wat or Ethiopian Lentils with Berbere Spice. 100% Teff Injera is a fermented, usually yeast-risen, iron-rich flatbread that is prepared in a pan, like a thick crepe. It has a mildly sour taste, and in this recipe, it is gluten-free and yeast-free. If you don’t want to take time to ferment the batter and make it sour, you can prepare this recipe right away— it’s still delicious.

Injera is made with teff, a tiny, round grain that flourishes in the highlands of Ethiopia. While teff is very nutritious, it contains practically no gluten. This makes teff ill-suited for making raised bread, however injera still takes advantage of the special properties of yeast.
